i saw the YT-2000 can have 1 escape pod... does that mean 1 escape pod can be docked inside it?

No, it would need a docking bay and space for an escape pod for an escape pod to be docked inside it at the moment.

Escape pods aren't implemented properly yet, they cannot be added into a ships slot for them. Just produced and carted around till they can be.
