How do you tell an NPC to pilot a ship. I bought one to fly around my friend's ship and to follow my company ship, but I don't know how to tell him to fly it. I've tried talking to him but that didn't work.

Currently you do not need an NPC to fly around another ship of the same typ that you are in. If your ship is a fighter or certain Freighter then you can assign the ship as NPC controlled from your 'manage piloted ship' screen.
The actual list of ships can be found on the NPC's page of the rules.
However, if the ship that you are trying to make follow you is not the same type, then you cannot make it follow you. As of now, pilot NPC's can't actually pilot a ship. This will get implemented later on.

What is the use of pilot NPC if they will never fly a ship independently?
When you say same type of ship when activating NPC controlled, did you mean same model? Or just any other model of freighters assuming that I'm already piloting a different model of freighter. How many can I set as NPC controlled?
You can only set ships as "NPC-piloted" that are of the same type that you are flying.
(Keep in mind: this feature does only work for a limited number of types of ships).

And to your question about future uses of NPC:
We can only speculate or make suggestions in the proper sub-forums about that.
Currently there is no use for pilot NPCs. A use will likely be implemented for them in the future, but we do not have information on that that will be yet, only on what it won't be.
Type does indeed refer to model, and not fighter/freighter designation. You can NPC control an A-Wing if you are flying A-Wing, but you cannot NPC control an X-Wing with an A-Wing.
