Which template should I choose? Are there any guides to what you can do with each template? Like, as a politician, do I really become a politician? I don't understand. What's the best to start as?

Start as whatever you want!
In fact, don't even use a template. You can manually create whoever and whatever you want. Skills don't control what you can do in this game, only how efficiently you can do it. If you want to be a politician, you'll have to actually work with other people politically and get yourself elected in one of the few places with elections.
