On the movement page in the escape pods section it says that pods can be re-docked into a ship however it is not mentioned on the repair page. Has this function been added yet to the game or is this to be added in the future?

If the ship has a Docking Bay present, you can dock the escape pod inside. However, you cannot return a pod to a ship to restore the number of escape pods available to the ship - you must use repair to effectively make a new one.
