Why do a lot of creatures such as the Acklay and Rancor have Projectile Weapons skill points? Is it because of the range of their attacks or what?

Ignoring Dante's statement, creature weapons technically fall under non projectile and projectile weapons. Chances are that most if not all creature weapons actually exist in the database as projectile weapons. They do seem to bounce around about which skills are given, but there's probably a correlation between their creature weapon's type and the skill the creature has been given.

It's also possible all creatures have a projectile vomit attack that is currently disabled.

As I recall, weapon skills don't do anything for creatures at all... they should be using exclusively strength, dex, and dodge, regardless of the "type" of weapon. They just got something filled in for the other General skills since it's all one string.
