With the recent release of the new mining and prospecting ships comes an overhaul to most of the other Mining feature related art, as well as some new ways to view large images of rocks thanks to Clarrs help which are coming soon. Currently you can view them via the NPC Market material listings in the meantime by clicking the small image just like any other.
