How do u tell ur npcs wat 2 do, and wat is an info field

I can answer the second one.

Infofields are set by your faction, they might display your rank or other positions within that organisation. Its a way of making you more unique haveing some form of title. Such as one of mine is Sub Archon and that is my rank.

As for the NPCs I'm not sure.

You can't "tell NPCs what to do" in that broad of a sense, as this is a game focused on real players and the function of NPCs vary. For example, you can descend to a city with raw materials and builder NPCs and instruct them to build a facility. Or you can place worker NPCs in a mine and tell them to extract materials, or place them in a factory or shipyard and tell them to build an entity.

I suggest you join a faction if you haven't already, because many have excellent academies for teaching their members how to play the game and use its many (sometimes confusing) functions.
