How many different types of custom NPCs are there? And do they do any thing?

I got one "transporting offplanet", but I don't know how the NPC works...

There's only one type of custom NPC. What you have there, in the 'Transport Offplanet', is what is called a conversation NPC. Mostly they're either information kiosk's, window dressing or they actually perform some action (brawling, healing, building etc).
