Looking back I could have done better on my character creation, so I was wondering:

When you level up, do you literally gain one skill point, or do you get one for each branch (general, social, space, etc.) ?

1 SP per level. It's a good idea that most people do, through the levels you gain the 1 SP per level, so you should save you're SP's until later in the game when new features are implemented, such as combat and R&D (soon TM).
