Are there planets that people can find by jumping into sectors?
And is there more things than just jumping into systems to have a better chance?

For what it was explained there are still several planets out there to be claimed.
But you will need to jump to (sectors) that doesn't already have know planets/system on them.

About better chances there are any Saxon, you just need a lot of work and luck like everyone else.

Yes there are basically always still hidden systems because new ones get added over time. Really the best way to do it is probably to coordinate an effort within your faction so you aren't covering space that you think someone else might have covered, and split up the work sector by sector.
